One of the clips showing a chef slicing in half a headless fish probably a tuna, the fish flailing widely and almost fell from the chopping board.
So why this dead fish still moving? Although these sea food was already dead, there are cells that can still respond to stimuli, muscle motor neurons (the nerves that create movement within the tissue.) Still contain some membrane potential.
Also human corpses are also known to randomly jerk and limbs move for hours after death.
In other words muscle cells are still alive that can react to different stimuli.
